Sharpen Those Knife Skills with Kitchen Knife Skills: Essentials for the Confident Cook — iPad App Review

Does the idea of trying to chiffonade mounds of herbs or chop onions for the Christmas stuffing fill you with dread? Do you wish you knew how to gut and skin a whole fish? Did you ever wonder why some knives cost hundreds of dollars while others can be had for so much less? Kitchen Knife Skills: Essentials for the Confident Cook promises to address these questions, and many more, through its interactive and intuitive digital interface.

With holiday dinners fast approaching, the home cook is especially keen to improve her knife skills, and Open Air Publishing’s Kitchen Knife Skills serves up all the skills one needs to select, use, and care for kitchen knives. The app includes 36 video tutorials covering both the daunting (carving a turkey, prepping pineapple) and the mundane (carrots, lemons).

Experts Jane Kirby and Sarah Copeland walk the reader through knife anatomy, knife grip, basic techniques, even cutting board selection (Food poisoning is real!).

The book’s chapters address basic technique, how to cut, chop, slice through fruit, vegetables, seafood, poultry, and red meat, as well as tips for caring for and purchasing knives. Nuggets of kitchen wisdom appear throughout the app that offer up interesting bits of information such as the difference between a filet and a fillet.

After studying the book, the reader will grasp the meaning of the “chef’s pinch” and the “push/pull cut.” She can also download a printable shopping guide to help her select better fruit and vegetables at the supermarket.

The apps two final chapters address knife cleaning, sharpening, and storage, as well as offering a buying guide to that covers many different knife styles, sharpeners, and cutting boards.

Download Kitchen Knife Skills: Essentials for the Confident Cook from the App Store for $2.99.

What I liked: Kitchen Knife Skills is extremely thorough, yet most of the instructional videos were brief enough to watch even while one is cooking.

What I didn’t like: The interface allowed me to play multiple videos at one time, and once I made this error it was difficult to correct.

To buy or not to buy: At its current sale price of $2.99, any home cook who plans to cook a large meal this holiday season will benefit from reading Kitchen Knife Skills.
